Dead or Alive 3 Available Cheats:

Control victory view
Press R3 or R4 and use the Left Analog-stick or Right Analog-stick during the victory scene after a battle to change the camera angle. The Left Analog-stick pans the camera, and the Right Analog-stick zooms in and out. Control replays: Hold A + B + X after winning a match. When the replay starts, press Y to slow it down or go back.

Ein
Successfully complete the game with all fighters and play as Hayate in survival mode. Defeat at least three fighters, then enter EIN at the initials screen. Ein will now be unlocked in all modes except for story mode. Note: This also unlocks random character selection.

Shirtless costume
Successfully complete time attack mode with Ein in under six minutes.

Kasumi: Alternate hair
Highlight Kasumi at the character selection screen. Press A to have her hair in a pony tail or X for a long hairstyle.

Kasumi: Schoolgirl costume
Successfully complete exercise mode in the sparring mode.
